The 2019 vintage comes from the Schlossberg location, which is famous for its name and tradition. We produced the 2019 vintage a little differently, in a special version, because we want challenges and variety in the cellar.
We picked ripe grapes, there was some noble botrytis on the berry skins. Maceration of the grapes took place for 10 days at low temperatures, it boiled spontaneously, and after pressing it was poured into a 10, where it fermented to the end and matured on the lees with constant stirring. Biological dissolution also took place spontaneously. Then in October, one year after the harvest, we bottled it. No filtering, just a minimal almost homeopathic dose of sulphur.
The color of the wine already announces that it is coming to the big door – it immediately charms us with its glowing, warm golden color with orange-green tones. The aroma is multi-layered, floral-fruity and with a slight hint of wood. It would be hard to say that we are in Slovenia, let alone that we are tasting Laška Riesling! In the mouth, the minerality of the smell stands out even more, but the taste is not so intense and pleasantly rinses the mouth. The wine feels fresh on the whole, has a fairly full body, pleasant ripe acidity and roundness, but also has something that would be more attributed to red varieties: spiciness as well as saltiness, which calls out for a wide range of dishes.
