The most complex wine with great aging potential, made only in best vintages and in very limited quantity. A blend of more varieties, depends of the qualiy and potential of single grapes. We select only the most mature grapes which are good for 6 month of maceration with spontaneus fermentation. The wine need 3 years of aging in oak barrels and after it goes in the bottles without filtration. Is natural wine, made using biodinamyc pricimples. Very poweful, full of mature notes and life. Is Black wine for special moments which you will never forget.
MACERATION
Maceration is the winemaking process where tannins coloring agents and flavor compounds—are leached from the grape skins, seeds and stems into the must. To macerate is to soften by soaking, and maceration is the process by which the red wine receives its red color, since raw grape juice is clear-grayish in color.
