Variety: 100% pinot noir

Boris’s tip: Forest fruits aromas. Deep Pinot Noir. Something special.
A Pinot Noir with a translucent ruby red color and a rather dense texture.
Intense and fine aromas express perceptions of ripe plum, black cherry, blackberry, and dry red flowers. Followed by scents which subtly mix this variety’s elegance with maturation in oak, a slight buttery note plays with perceptions of cinnamon, caramel and smoke. The finish is reminiscent of forest undergrowth, leather, and the tip of a pencil.
The mouthfeel is soft and warm. Freshness intertwines with minerality, while tannins act silky and release their grip gradually. It is an elegant and structured wine that shows its youth and intensity. Fruit and spice flavors are repeated on the palate and leave a long-lasting aftertaste.
Vinification process: Grapes are destemmed and put in vinificator with skins where the fermentation begins with indigenous yeasts. When the fermentation is finished, grapes are pressed and racked in barriques.
Aging: Barrique (225 l French oak barrels) for 30 months.
Pairing with food: A harmonious wine that will only enhance its true expression and is suitable for a long maturation. Due to its properties, it will go well with pork loin or cutlet, as well as soft roasted veal. It will also be suitable for crispy roasted pork or veal ribs.
