The classic method
In 1997, the Rebula farm enriched its range of quality wines by producing the first city sparkling wine according to the classic method from Malvasia. The sparkling wine is dry, fresh and full-bodied, with a distinct and intense flavor and flower and a very persistent perlage. The color is a fairly deep golden yellow. There is a lot of foaming during casting, then there are a little less chains. The bouquet is surprisingly youthful and varietal for a 2008 sparkling wine. There are slightly spicy notes, vanilla, wood – the base wine almost certainly matured in wood – as well as honey, acacia and white flowers. In the mouth it is slightly sweeter, spicy, the bubbles are calm. A fairly full-bodied, stronger sparkling wine that has aged surprisingly well. Karst is obviously an excellent area for white wines.
Penina Anastazija is named after the church in Brestovica, where the Rebula winery is located. The brand and quality of Br`stovska sparkling wine represent the highest achievement and exceptional sales for the Rebula farm. Br`stovska sparkling wine, served at 6 to 8°C, is indispensable at banquets, parties and gatherings, as well as good and tasty sweet pleasures of home-made food.
