Softer orange-onion colors. The bubbles are larger, slightly cloudy. On the nose, floral-animalistic perceptions are found, with time also becoming spicy. Wildly. Dry in the mouth, foaming is abundant, acids are moderate. Cute pet nat.

Pairing with food: barbecue, dried meats.

PET-NAT
Pét-Nat is produced in the ‘methode ancestral’, otherwise known as “rurale,” “artisanale,” or “gaillacoise.” Long story short, the wine is bottled prior to fully completing its first fermentation, allowing carbon dioxide to be produced by the natural sugars found in the grapes.
