The wine has a delicate golden yellow color. The flower is youthful, pleasant, just intense. It smells like elderflowers, tropical fruits, lemon, lime, even spicy. Dry in the mouth, with a rich texture, a salty touch, moderate acidity and a stronger body.
Classic harvest towards the end of August, short maceration of a few hours, pressing and 21-day temperature-controlled fermentation in stainless steel tanks. After the flow, the wine matured for the next 9 months in stainless steel tanks with kneading – bâtonnage (three times a week – half a year).
Pairing with food: fish, white meat, cheeses, salads, pasta.
