Sauvignon Valentan

We planted Sauvignon in our house 12 years ago in the location of Tupica, where the conditions for growth are extreme, namely the vine was planted in stone and marl. The fact that we waited for the first harvest for six years (usually two or three years) testifies to the fact that this is indeed the case.

The grapes of the 2019 vintage were picked very late, we reached great maturity, because we decided years ago that we wanted to express our vision of wine in this variety. The mash was macerated for a day and a half, the must boiled spontaneously in stainless vessels, and as usual, the somewhat longer maturation on the mash contributed to the fact that the doses of sulfur throughout the year were minimal.

Even with its deep, shiny golden color, which also has some greenish shades, the wine announces the full ripeness of the grapes and the richness that is revealed to us in the smell and taste. The smell is fruity-floral, as the garden says (rosehip), but it also expresses sauvignon-typical pyrazine notes (green pepper). The taste is velvety, full, slightly mineral, long-lasting, and, although rich in alcohol, it does not seem harsh and heavy, so it rinses the mouth nicely and leaves a wonderful aftertaste. It will impress everyone who has ever been introduced to French sauvignon wines, which are more primitive and not, as we say, at the first breath, just as the wine evaluators at domestic and international competitions have been impressed many times.

Pairing with food: boiled and baked vegetables, asparagus, moussaka, poultry, pork, local spreads with spices, boiled fish, Asian food, soft and mature cheeses.
