Boris’s tip: One of first sparkling wines in Slovenia made only from rebula. Nice and easy to drink.

Color: straw yellow with elegant sparkle.

Smell: characteristic smells of rebula with a gentle yeast note.

Taste: wine with invigorating freshness, elegant long aftertaste.

Recommended food: as an aperitif or a seafood accompaniment oysters, fish, sushi

Sinefinis Rebolium sparkling wine from rebula, produced in Italian and Slovenian vineyards in Brda. It is made by the classic method – with secondary fermentation in the bottle and long maturation on yeast.

Gentle golden yellow color. The bubbles are lazy, just nicely dense. The bouquet is calm, nicely ripened, white flowers, butter, bread crust, lemon. Very dry in the mouth, higher acids that further invigorate the wine, the taste in the mouth offers good intensity and clarity. With a nice, clear aftertaste. It can be an aperitif, or an appetizer. Very good.

Sinefinis Rebolium is a joint project of two winemakers. Matjaz Certric produces wines in Goriska Brda, Slovenia. Robert Princic does the same on the other side of the border in Collio, Italy. Both are growers of the iconic ribolla grape, native to the region. For this wine, grapes from both vineyards are used. This wine is therefore not subject to AOP appeal. But that does not detract from the quality. For us, one of the most beautiful sparkling wines we have been able to taste recently. Subtle, fresh, elegant and persistent.
