Vitovska grganja is our native Karst grape variety, which has successfully made its way to the world in recent years. We have been producing it in our cellar for the last three years. Compared to other varieties, the vine is undemanding and working with it is real poetry compared to other varieties. It is ideal for organic farming, which we have also implemented on our farm. With this method of farming, it requires a suitable vineyard location and some shade from the owner during ripening, as it does not reach extreme sugar levels, which is expressed by a lower alcohol content. In our cellar, it is prepared using the classic maceration technique, the grapes are selected during the harvest by separating the bad berries from the good ones. Maceration took place for 6 days in an open vat with the hat dipping, without temperature regulation. We picked it by hand in the vineyard, quite late for this variety, so it does not have excessive freshness, which indicates a very rich wine, which is suitable for wine lovers on cooler evenings. After fermentation, the wine matures in a stainless steel tank, as we want it to retain its velvety, creamy taste, which expresses this variety.
Pairing with food: we recommend it like all other white wines, with fish, soft young cheeses, it is also an excellent accompaniment to steak tartar and vegetable dishes, especially vegetable pies and other vegetables prepared in dough.
