Volk Pet-Nat Rosé Sanctum

TERROIR
Continental cool climate, with cold winters and sunny, mild springs, with sun-drenching summers. The vineyards sre located on steep slopes (30-40˚) of hills above Loče with southern-exposure, at an altitude of 300-400 m above sea level. The soils are predominantly marl with some spots of clay.

VINIFICATION
Hand-harvested grapes were destemmed and spontaneously fermented in stainless steel tanks. Two day maceration. Still fermenting wine was bottled and then roughly disgorged.

TASTING NOTES
The wine is a yeasty sparkling rosé with some cloudy sediment and lively bubbles. Juicy and bright, with aromas of cranberry and raspberry, this pet nat is a refreshing treat.

Pairing with food: pairs well with appetizers and cheeses.
