Pinot Noir Sanctum

TERROIR
Continental cool climate, with cold winters and sunny, mild springs, with sun-drenching summers. The vineyard is located on a steep slope (30-40˚) of hill Lipoglav with southern-exposure, at an altitude of 300 m above sea level. The soils are predominantly marl with some spots of clay.

VINIFICATION
Hand-picked, carefully destemmed, with a small percentage of whole bunches, and fermented in small batches. Natural yeast fermentation. Matured in used French oak barriques for 12 to 18 months. Bottled without filtration.

TASTING NOTES
Wine is of gentle ruby colour. Very elegant, with a hint of cherry fruit. Smooth tannins, firm acidity, well integrated oak. Cherry and plum fruit on the palate, supported by a subtle hint of rich coffee. After taste is long and decisive.

Pairing with food: grill, steak, dry meats.
