Chardonnay Sanctum

TERROIR
Continental cool climate, with cold winters and sunny, mild springs, with sun-drenching summers. The vineyard is located on a steep slope (30˚-40˚) of hill Lipoglav with southern-exposure, at an altitude of 300 m above sea level. The soils are predominantly marl.

VINIFICATION
It is produced from carefully selected grapes from our vineyard. Minimal intervention approach in the cellar. After pressing the grapes, the must ferments in new and used barrels made of Slovenian and French oak. Spontaneous lactic acid fermentation is finished in the barrels. The wine matures from ten to twelve months on the lees. Bottled without filtration.

TASTING NOTES
Golden in the glass. Pure varietal aromas of apples and apricots balanced with a hint of creaminess, vibrant acidity and harmonious oak. Slightly smoky, loads of ripe yellow fruit, layered. Dry, moderate acidity, medium body, with a slightly oily texture and a very well-defined character in the mouth. Precisely crafted full-flavored chardonnay with a long finish. Excellent!

Pairing with food: grilled fish, steak, mussels.
