Our Chardonnay is planted in Sremič on a traditional vineyard site that was once cultivated by Trappist monks from Rajhenburg Castle. The year 2021 was very special for several reasons. Due to the frost, the harvest was only one third of the normal harvest. Due to the dry, sunny autumn, the remaining grapes ripened nicely and were completely healthy. After the alcoholic fermentation, we carried out the bilogous acid and then mixed the lees for 6 months, partly also in wooden barrels. The wine is soft and delicate, yet characterful and full-bodied. We believe it will age beautifully in bottles and get better every year.
Serve chilled at 8-10 °C

Winemaking: Alcoholic and lactic acid fermentation in stainless steel vessels
