We handpicked and whole bunch pressed both grape varieties at the same time. Before fermentation ended we bottled wine together with lees (no filtration). Natural residual sugars in the bottle transformed into alcohol and caused sparkles inside the bottle. Because of the lees in the bottle, Pet Nat is alive wine with no need to add sulphur at all.
Fedora Pet Nat is fruity, rustic and gentle at the same time. Needs to be served cold in red wines glasses.
