Bastard Slamič

It is a 2020 Teran wine from the Velika Njiva vineyard, located in an exceptional southern location in the vicinity of the village of Komenv in the Kraška wine-growing region. The 2020 vintage was above average in terms of grape quality, as the weather conditions allowed us to harvest at the end of September, which was above average dry for this time of year. Throughout the vegetation period, we ensured with a lot of manual work that the quality of the grapes was indisputable, with a small load on the canes and ideal weather conditions, we brought grapes to the cellar that had reached full maturity, this is reflected in the alcohol level of the wine, which is over 13 %, which is a rarity for Teran. Maceration took place for 9 days according to the classic method (betonage) in open vats with the dipping of the cap and the lifting of the yeasts. Fermentation was followed by racking on coarse lees in stainless steel containers. After the completion of malolactic fermentation, the wine was poured into wooden barrels. For the Bastard wine line, we use exclusively new 550 l oak casks from the manufacturer Garbellotto. The wine matures in wood for one year on fine lees, which are stirred weekly during the maturation period and thereby raise the yeast, which gives the wine a rounded and rich taste. After the maturation process, the wine continues its story in the glass.
The fruitiness of the cluster is beautifully expressed in the wine, complemented by woody notes that are nicely integrated into the wine and give it a piquancy, a nice and doug taste reminiscent of the undergrowth.

Pairing with food: wine is recommended with matured meat – steaks. In our home, it complements well with homemade lamb, we also recommend it with dry meats.
