Maturation: 11 months in big Slavonian oak barrels, refined in stainless steel vats
Amber colored with notes of blood oranges and bees wax. A modulated acidity lingers to the finish. Gorgeous straw-colored wine, complex evolution of flavors, from papaya and cantaloupe to lychee and muted citrus flavors, with balanced acidity and apple and herbal notes on the long finish.
Pinot grigio was immediatly pressed and must began spontanously ferment in barriques. Chardonnay and Sauvignon destemmed grapes were macerated in Slavonian oak fermentators with indigenous easts for 4 days.
Pairing with food: Pasta, Shellfish, Mature and hard cheese, Lean fish, Cured Meat.
