Marof is a winery dedicated to purism. In keeping with traditional vintners’ heritage, this wine is fermented with no added yeast, matured in oak casks and bottled with no fining and filtration.

Marof is a winery dedicated to purism. In keeping with traditional vintners’ heritage, this wine is fermented with no added yeast, matured in oak casks and bottled with no fining and filtration. If natural sediment occurs in the bottle, rejoice! It is a sigh of minimal intervention winemaking, loyal to nature.

Deeply purple coloured, opaque. The bouquet is harmonious, but compact, with many impressions of black fruit, earth, dry spices, even an animal, fleshy note is found, smoke. Dry, firm, the texture is velvety, the tannins are supple. Elevated acidity. The spiciness of Blaufränkisch is nicely indicated in the mouth. A wine full of flavor, at the moment still a bit robust, but with beautiful potential.

Vinification: Hand-picked into 10 kg cases and emptied gently into a destemmer. Selected grapes move to 50 hl oak fermenters for spontaneous fermentation with wild yeast and 30 days of maceration. Aged for 30 months on fine lees in 228l French oak barrels and 25hl oak casks. No filtration nor finning.

Serving temperature: 14-16 °C

Pairing with food: red meat, aged cheese, cold cuts.
