Green silvaner is a traditional indigenous variety. The volcanic base of the soil gives the wine unique taste. Better known as the Alsace grape Sylvaner, this is one of our favourite examples, and has just returned after several vintages lost to the weather conditions. The aromatic profile is partly flowery, partly herbal, yet firm, dry and focused, concentrated and remarkably taut.
Tasting notes: Heady nose of campfire, clementine peel and orange blossom and baked cream. Golden, shimmering, a mouthful of dust and wide sunset colors. Wild and elusive and fiery with life, orange citrus and white pepper, with an intense quince-sweet perfume. But there is a great stillness at the core of this wine.
Vinification: Spontaneous fermentation with wild yeast only, 10 days of skin contact. Aged on fine lees for 18 months in 25hl oak cask. Unfined.
Pairing with food: It would be wonderful with pork or scallops.
