Wine region: Goriška Brda
Variety: 40% rebula, 30% chardonnay, 30% pinot blanc
Vinification: pressing grapes with low pressure – selection of must, controlled fermentation in concrete tanks
Maturation: 6 months on the yeast, 4 years in bottles
Gentle lemon colors with golden hues. The bubbles are tiny, not many. The flower is discreet, ripe. Yeast, champions, apples. Very dry in the mouth, the acids are quite moderate for sparkling wine, the taste in the mouth suggests tertiary notes, maturation. Maybe a little lack of intensity, even sparkle. Otherwise, it is a good, mature sparkling wine.
Parring with food: crabs, fish, shellfish.
