Boris’s tip: Sexy white cuvee sparkling traditional method – great beautiful small bubbles.
Gentle lemon colors with golden hues. The bubbles are tiny, not many. The flower is discreet, ripe. Yeast, champions, apples. Very dry in the mouth, the acids are quite moderate for sparkling wine, the taste in the mouth suggests tertiary notes, maturation. Maybe a little lack of intensity, even sparkle. Otherwise, it is a good, mature sparkling wine.
Pairing with food: crabs, fish, shellfish.
