This Refošk is dedicated to Ivan, the brand creator. The first private owner in Slovenian Istria to bottle wine under his own brand Bordon, one of the first in Slovenia at the time. This Refošk is produced only in exceptional vintages, in the best micro-locations. Before being processed, the grapes go through manual selection. The grapes are macerated in Slovenian oak tonneaux by hand-pressing the cap and because some grapes are allso overripe and in some cases already raisined, this process takes over a month. Once fermentation is complete, the grapes are pressed and racked into oak barrels of different sizes, some of it in new barriques, so that everything is nicely integrated.
Serving temperature is 18-20°C.
Pairing with food: Serve with venison or grilled dishes, dry age steak, aged istrian ham, mature cheeses.
