Matej Švare’s Malvasia comes from the vineyard in Gorjansko. Squeezing is followed by 12 days of maceration in tubs after which the wine ferments in 54-liter bottles (damigiana – big glass vessel) until it is bottled after approximately one year. The wine is not filtered.
“Playful golden-yellow color. A rich smell with gentle notes of apricot and green apple gently combining with the aroma of acacia and a gentle note of fresh hay. Fresh, playful, and mineral with a nicely-rounded aftertaste. The wine will reach its peak towards the end of 2021.”
Pairing with food: It pairs well with all fresh fish dishes, seafood, light starters, risotto, pasta, cheese, desserts.
