We started producing sparkling wine according to the classic method in 2016. We produce it from the Dolenjska autochthonous variety Kraljevina, which is a protected type of grape. The grapes of the kingdom are unnecessarily ignored many times. It is most suitable for sparkling wine, as it has high acidity, low aromatics and low alcohol, which is ideal for sparkling wine production. Colnar sparkling wine is brut natur, which means it has less than 2.6 grams of leftover sugar. According to the classical method, it matures on yeast for a minimum of 30 months. In the glass we notice lively small bubbles, and on the nose and in the mouth we can smell aromas of citrus, green apple and bread crust. We recommend sparkling wine in combination with fresh oysters, various cheeses or white fish.
