Pallidia is produced using the méthode traditionnelle, maturing on lees for at least 36 months.
Of distinctive straw yellow colour, characterized by fine bubbles and long lasting foaming. The aromas that we detect are fine, fresh and fruity. We also notice the scent of citrus fruits and bread crust. These fine aromas indicate a nurtured sparkling wine which lay on yeast for a long time.
Sparkling wine preserves the noble taste of local Malvasia enriched with the mineral content that is obtained in our vineyards from the mixture of Karst soil Terra Rossa and flysch. The vineyards lie at the turning point of the Vipava Valley into Karst. Several years of maturation on yeast gives the wine a bold and mature taste.
Parring with food: ecommended as an aperitif and as accompanying drink to seafood, fish, poultry, and pasta.
