Tenebra is produced using the méthode traditionnelle, maturing on lees for at least 36 months.
Tenebra has characteristic colour of dark ruby, distinguished by fine bubbles and long-lasting sparkling foam, which is particularly evident on the edge of a glass. The aromas that we find are mature, fruitful, especially the scent of raspberries and dry plums. These mature aromas show a well-groomed sparkling wine, which ripened on yeast for a long period of time.
Tenebra preserves all the noble flavours of Refosco, which produces the Teran wine, enriched with mineral content obtained in our vineyards on Terra rossa soil. The vineyards lie at the turning point of the Vipava Valley into Karst.
Parring with food: recommend as a companion to dried meat products, meat dishes with wine aromas, grilled meat, baked duck with chestnut, slow roasted octopus under charcoal, black chocolate desserts, and chestnuts.
