The Rumeni Plavec (80%) and Chardonnay (20%) varieties grow on the carbonate soils of the best locations in Drenovac and Orešje in Bizeljska. The basic wine is pure solitude, and the rarity is emphasized by the fact that it is the only known sparkling wine produced by the 4-fermentation process.
Sparkling wine is made with champagne yeasts, which are added twice; during fermentation for the base wine and during secondary fermentation for the creation of sparkling wine. Nothing is added to the sparkling wine, so we are talking about brut nature, or completely dry sparkling wine.
The sparkling wine has a pleasant pale yellow color with long chains of extremely refined bubbles. The aroma is floral, fruity (citrus, tropical fruit, peaches, apple), but nevertheless interestingly structured, as it gives us hints of champagne (hazelnut, yeast), complemented by notes of microoxidation.
In the mouth, there is a rare refreshing sparkling wine with a pleasant taste, which expresses even more the so-called champagne quality of the sparkling wine, as we can feel the aftertaste of a buttery croissant. In the aftertaste, the sparkling wine is interestingly persistent and shows the richness of the body structure.
Pairing with food: as an aperitif, oysters, fish spread with truffles, as well as caviar or foie gras, sushi.
