A wine with a brilliant, straw yellow color with a golden hue and a dense texture.
The refined flower is reminiscent of yellow apple, peach, and yellow plum. Perceptions of orange peel intertwine with lemon, carambola, almond blossom, and yellow rose. We also detect gentle notes of vanilla, anise, and rosemary.
The palate acts soft, while at the same time it offers a great amount of freshness and minerality, which gives it a long-lasting vivacity. Its taste is intense, medium-bodied, with an elegant taste in which the aromas of citrus fruits, flowers and Mediterranean herbs are expressed.
Vinification process: Grapes are destemmed, selected and cold soaked for 18h. After maceration grapes are pressed and then the fermentation with indigenous yeasts begins. The wine is aged on the lees for 8 months.
Aging: 50% Barrique, 50% inox tanks.
Pairing with food: A wine that will be an excellent accompaniment to both raw fatty fish and baked white fish. Try it also with salmon fillet, accompanied by a salad with orange slices, fennel root and fried pine nuts or almonds.
