The idea behind Moia / Royaz sparkling wine production was to capture the distinctive strawberry aromas of refoška, while the original fermentation takes place in a bottle for our family and friends to enjoy all year round.
How do we do that? Secondary fermentation is carried out in an unusual way – the wine base is bottled with fresh must, which triggers the fermentation process in the bottle in front of you. The wine is not degassed or filtered, so all fermentation residues / sediments are present in the bottle. We can drink it as such, it is very good and natural, or we can disguise the bottle ourselves. For “home decorating”, it is advisable to place the bottle upside down in a cool place for a few hours before serving and then degas in a container filled with water. We do not take responsibility for a dirty interior, but remember that the exercise is the work of a master.
