Medium deep golden yellow. The bouquet is calm and beautiful. Dry in the mouth, medium body, high acids, the texture is slightly oily. Uniform and compact wine. Neat, mature, great chardonnay. Sirius – named after the brightest star in the sky – is made from the Chardonnay variety. We only grow it in excellent vintages after it has matured for 18 months in French oak barriques. His character is complex, full and persistent. Quite a few comments say that it has the freshness and verticality of chablis and the fullness of wines from the Côte d’Or. At the time of its release, it is still young, reaching its peak in 3-5 years, and can mature for at least a decade, even more. Serve it with roasted fish with sauce, roasted chicken with mushroom sauce or grilled scallops.
