The golden-yellow dry wine is full of flavor with a mineral character. The bouquet is restrained but compact, dominated by aromas of ripe yellow fruit and oriental spices.
SUTOR WHITE is a traditional Vipava white variety of MALVASIA (70%) and REBULA (30%). Grapes come from our older vineyards, where growth is moderate and yields are low (30hl/ha). We cultivate the vineyards with great respect for nature. The wine matures for 18 months in wooden 20hl barrels together with 20% berry skins without flow and with frequent stirring.
Sutor’s White wine is a variety of two traditional regional varieties that have adapted well to the Vipava climate. Malvasia gives the wine floral aromas, a peach scent and a slight spiciness, while Rebula adds freshness and citrus. Both varieties come from old vineyards and are in perfect harmony. Fermentation was spontaneous, with no added causative agents. It took place in large wooden containers, the wine matured in large wooden barrels for 1,5 year. Lactic acid fermentation took place without added bacteria.
White is a dry medium-bodied wine. The wine is stronger, with a nice buttery texture and a unique mineral character. The aromas of ripe yellow fruit, butter, a hint of wood and oriental spices intertwine.
