Harmony is certainly the aspect of this wine that strikes us most. The incredible nose-mouth correspondence makes it one of a kind.
Softer golden yellow color. The flower is youthful, variegated, yellow apple, white flowers, wet stone, dry flowers. It develops and becomes wider with time. Dry in the mouth, with a buttery texture and moderately high acids that are balanced. The character in the mouth is calm, but persistent, complex. Long and intense finish. Also mineral, salty. Great white variety!
VINIFICATION: Ribolla Gialla vinified in white without destemming with 72h cold maceration, maturation on the fine lees (sur-lie) with battonage for the first 3 months. Maturation in stainless steel (64%), wood (28%), terracotta (8%). After bottling it ages for over 8 months in the bottle.
Pairing with food: poultry, grilled fish, shellfish, starters, soups/minestroni, fish first courses, fish second courses.
