Cabernet Sauvignon is a very fruity red wine with cherry notes and all different red fruits and a little bit of vanilla. It has a lot of structure and long after taste. 18 days of maceration and all 18day twice a day we are doing a Delestage method that means we decant the juice from the original tank to another tank which is outside that helps the wine to absorb oxygen after 2 hours we decant back into the original tank and spray it on the hat of berries because we want the juice always in touch with the skins. After 18 days we press it and it goes into the French barrique barrels for 3 months and then into the concrete tank again.
